After making my hubby his favorite Huevo’s Rancho’s for his Fathers Day breakfast I headed back into the kitchen to make this clean yummy eat for me.
An Egg White Goat Cheese Omelette. Instead of potatoes I sautéed Kale and Tomatillo’s and topped it all with salsa and roasted red peppers. Yum!
Instead of the high fat sour cream I did this: Mix 1/2 cup of NF Greek Yogurt with 2 Tbls of Gourmet Garden Cilantro. You get that creamy rich flavor without the calories. Gourmet Garden is found in the veggie section at the market by the herbs. It comes in a squeeze tube and there are lots of flavors to choose from like Garlic, Basil, Lemon Grass, and Cilantro. Love the stuff!
