Freek-y Clean Super Bowl Eats

Its almost Superbowl time! Good eats and Superbowl are a given! What would Superbowl be without good eats? Who doesn’t include a fabulous food menu on the list of “must haves” this Sunday? But listen, just because food is a focus does not mean you have to look like an audition participant for Foodie Behaving Badly. I’ve come up with three great, clean, easy, low carb additions that you will enjoy not only on Superbowl but often!

Each one contains a grain called Freekah although you could use any grain. I just recently discovered freekah. It is hard to find but well worth the hunt. If you cannot find it ask your local healthy store to order it for you. Whole Foods carries it, my local Sunrise Natural Food also carries it. I have not yet checked Trader Joes yet but hope to get there this weekend.

Freekeh is this delicious, highly nutritious grain made from young roasted green grains. It is free from any chemicals or GMO. Freekeh contains more protein, vitamins, and minerals than the same mature grain and other grains. It is low GI, low carb, high in fibre(up to four times the fibre of brown rice) and rich in prebiotic properties. It is excellent for managing diabetes and may diminish the risk of colorectal cancer and diverticulitis. Green Wheat Freekeh

Freekeh-licious Hot Turkey balls
Makes 20

These Turkey Balls are really great! Serve hot with salsa! The extras freeze well for a great grab and go protein source during the week. The Flax and olive oil provide small amounts of healthy fat and the cottage cheese provides added protein and calcium.

Preheat oven to 350. Spray a glass baking dish with Pam and set aside.

2 lbs of Turkey
1cup of Freekeh
1/4 Ground Flax seed
1/2 C NF Cottage Cheese
1/2 c diced onion
4 ounce can of chopped jalepeno
1/4 cup egg whites
1 Tbs Low Sodium Worcestershire Sauce
1 Tbl Olive Oil
1 Tbl Mrs Dash Fiesta Lime

Mix all ingredients and form into 20 golf ball sized balls. Preheat oven for 10 minutes and bake at 350 for 30 minutes.

Freek-en Crabby Cakes
Makes 8

These crab cakes are to die for! You can serve them on there own with some ground mustard or on a 100 calorie roll with spicy sprouts and Waldens Calorie free Chipotle Mayo! (another great glaze for these cakes is a yummy sugar-free sweet apricot glaze I will save for another day)

1 lb canned crab meat
1/2 c Freekah
1/4 c minced red onion
1/4 c minced celery
1 T prepared mustard
1tsp low sodium worcestershire
1 tsp dry Mustard
1 tsp seafood seasoning
1/2 tsp lemon juice
splash of hot sauce (Optional)

Preheat an oven to 400
Spray a glass baking dish with Pam

Mix all ingredients together. Form into 8 patties and place into dish and bake for 25 minutes. Serve hot.

Freekeh-shly Low-Carb BBQ Bison Balls
Makes 20

1 lb Ground Bison
1/2 c Freekeh
1 egg
2 Tbs dried minced onion
1 Tbs minced garlic
1 Tbs ground fresh Chili Paste (More or less to taste-I used a heaping Tbs and they were really hot! I like it hot!)
1 Tbs Low sodium Worcestershire

Mix all ingredients together and form into 1″ balls. Preheat oven to 350 for 10 minutes. Bake in oven for 25 minutes. Serve with Waldens Sugar-Free Thick and Spicy BBQ Sauce.
